*Ingredients:
°6-7 boneless, skinless chicken thighs
°1 tablespoon butter
°1 tablespoon of oil
°2 garlic cloves
°¼ c. chicken stock
°2-3 sprigs of fresh rosemary
Spice rub:
°2 tablespoons light brown sugar
°1 teaspoon garlic powder
°½ teaspoon onion powder
°½ teaspoon smoked paprika
°½ teaspoon hot pepper powder
°Half a teaspoon of black pepper
° Half a teaspoon of salt
* Preparation :
Step 1: Placing spice rub-ingredients (light brown-sugar, garlicpowder, onion powder, smok paprika, chili powder, blackpepper, salt) in bowl. Blend well to mixed .
Step 2: Use kitchen towel, pat chicken thighs dry. & sprinkling both sides generously with dried season mixture.
Step 3: Adding butter also oil in preheated heavy cast iron skillet. Time butter has melt, adding garlic cloves to skillet and fry about 30 seconds to slightly golden.
Step 4: In the skillet, place the chicken thighs fat side down and continue cooking for about 5 minutes over medium-high heat until crispy and golden. Flip the chicken and cook more (for another 2 minutes). Then pour 1/4 C of stock to sides of pan. Now, adding rosemary sprig. To release browned caramelized pieces, scrape the bottom of pan.
Step 5: Putting lid on also set it to simmer about other 2 min on high heat. Removing lid also let it simmer for a min or so to you get a thick sauce.
Step 6: When u ready, serving with rice, beans, or vegetables. On top, sprinkling sauce. Enjoy!
Notes:
Placing rest seasoning mix to an airtight container for later use.
Make sure the pan is not crowded or the chicken won't be cooked through. You can burn in two batches if necessary. Time chicken is all cook through, putting it back in skillet, then adding stock also rosemary.
