* Ingredients :
°9 short ribs
°Bacon grease
°1 cup chopped leeks
°1/2 medium red pepper, green pepper
°1 celery stalk
°3 cups beef broth
°1 tablespoon tomato paste
°1 cup water
°1 sprig of thyme/rosemary
°3 tablespoons minced garlic
°Cajun seasoning
°salt pepper
°flour
°1/2 cup red wine
°1 sliced potato
* Directions :
1. Season the short ribs with a little all-purpose spices
2. In a large heavy pot, heat bacon fat to medium heat
3- Put the short ribs in the hot oil until well browned on all sides, then remove from the pot and set aside.
4. Lay chop vegetables in bottom of heavy baking plate also placing short ribs on top.
Adding red wine & tomato paste & stir to well mixed
5. Pour beef broth until it partially covers the ribs. Add thyme, then season to your liking. I used a Cajun seasoning mix.
Cover tightly with aluminum foil and place in a 350 degree oven for 3 to 3/12 hours.
The liquid will mature to at least half its volume
6- Lift the lid and add the potatoes. Covering also cook about other 45 min.
