* INGREDIENTS

° 1 whole chicken at 2 kg (3 to 4 pounds).
° 1/4 cup (50 ml) salt
° 125 ml (1/2 cup) sugar.
° Salt & pepper to taste

* PREPERATION :

1.In a large bag or large airtight container, combine salt, sugar and 1 liter (4 cups) of water.
2.Add the whole chicken to this brine and marinate for at least 30 minutes and at most 4 hours.
3.Preheat the broiler to maximum.
4.Place one rack on the lowest level of the oven and the other on the upper medium level.
5.Cut the chicken into 8 pieces (separate the thighs and drumsticks).
6. Make 2 or 3 diagonal incisions on the skin of each piece of chicken.
7.Placing chicken pieces, skiin side down, in drip pan.
8.Salt and pepper then place the drip pan on the lower oven rack.
9. Cook the chicken pieces for 14 to 18 minutes.
10. Turn them over and cook for 20 minutes, or until the skin is very crisp.
11.Place the drip pan on the upper rack and broil, keeping an eye on the cooking to prevent the chicken from burning, until the skin is crisp and golden.
12.Serve immediately.
