MERINGUE PIE



I offer you my best lemon meringue pie recipe, with a homemade shortbread, a balanced lemon cream, and a just golden meringue. A great classic that is easy to reproduce at home. No complicated ingredients, for the more cautious use a ready-made shortbread dough, for others follow the recipe

List of ingredients :

+Crust
° 250g of flour
° 150 g butter
° 50 g sugar
° 50 g icing sugar
° 1 egg
° 1 pinch of salt
+Lemon Cream :
° 150 ml of lemon juice, i.e. 3 or 4 lemons
° zest of a lemon
° 150 g of sugar or less according to your taste
° 3 eggs
° 1 C. tablespoons of maizena or flour
° 75g butter
° Meringue (optional)
° 2 egg whites (or 3 small)
° 75 g sugar

* Recipe steps :

Making and baking the shortbread dough:
Beat the egg with the sugars and salt
Add the flour in 1 go, knead with your fingertips
Add the soft butter in pieces, knead quickly and form a ball
Film and refrigerate for at least 1 hour
Spread in the pie dish, cover with a sheet of parchment paper and beans, clay balls or a chain of metal balls available in supermarkets
Bake 10 minutes at 180 ° C, then remove the "weight" and put back 8-10 minutes to cook the center well. The dough must be golden (if not, prolong the cooking for a few minutes)
Book.
Making the lemon cream:
Take the zest of an untreated lemon
Bring the juice of the lemons with the zest to the boil
Beat the eggs with the sugar and cornstarch
Gradually add the lemon juice in a stream without stopping whipping
Put everything back on medium heat and thicken, stirring well all the time, you will obtain a cream.
Let cool and then add the soft butter in pieces, whisking well.
Garnish the precooked pie shell. Reserve in the fridge.
