GARLIC & HERB WHOLE ROASTED CAULIFLOWER



* Ingredients :

° 1 head cauliflower-leaves-removed
° 2 tbsp Melted butter or dairy-free butter substitutes*
° 2 tbsp. olive oil
° ½ tsp. salt to taste
° ¼ tsp. pepper to taste
° 1 tsp. Italian season
° 2 clove garlic mashed
° 2-3 tbsp Dairy-free Parmesan cheese if needed**
° Finely chopped fresh parsley

* Directions :

Heat oven 400 degrees F .
Cutting & removing leaves from cauliflower head. Cut and remove the thick white stem at the base of the cauliflower head.
In  bowl, whisk butter, oil, salt, pepper, spices, also crush garlic.
Place the head of cauliflower in a Dutch oven or in a baking dish. Using a grease brush, brush with 1/ of the butter and herb sauce. Reserve the remaining sauce.
Cover the head of cauliflower with aluminum foil and cook in a preheated oven for 30 minutes. Remove the foil and cook for an additional 10-20 minutes.
Spread the rest of the sauce over the cauliflower and sprinkle with Parmesan cheese. Turn oven to high heat and roast for 3-5 minutes or until cheese begins to turn golden brown.
Served with fresh parsley and extra Parmesan cheese.
