*Ingredients & Methods :
FIRST STEP:
Add shrimp shells and tail to 1 litre of water in a medium saucepan
When it boils, lower the heat and simmer for 20 minutes with a blanket on the pan
STAGE TWO:
Remove from heat and pass, removing shells and tails
Add clam juice to shrimp stock and add 1 cup cold water, side down
Add vegetable oil to pan and heat over medium heat while adding flour
STAGE THREE:
With a wooden spoon, add the flour to the oil and continue stirring until it becomes darker.
Start adding onion, pepper, celery, okra, garlic, thyme and cayenne, sprinkle with salt and pepper to taste.
Cook over medium heat, stirring often while vegetables become tender
STEP FOUR:
Divide the broth in half, slowly add the first half, stirring vigorously.
Add remaining broth and simmer
Remove any excess grease that comes to the surface
STEP 5:
Meanwhile, heat the pan over medium heat for two minutes.
At 2-minute mark, add 1 tablespoon oil to skillet
Add sliced sausage in one layer and brown on each side
STEP SIX:
Remove sausage, add ½ cup water and scrape bottom of pan
Simmer for two minutes
STEP SEVEN:
Add these juices to the simmering soup, simmer for another 30 minutes
Add sausage and simmer for 30 minutes
STEP EIGHT:
Add shrimp and cook for another 5 minutes
Remove from heat, add parsley and garnish with chopped green onions
