Hash Brown Breakfast Cups


°4 C. Hash browns, grated, thawed (I didn’t wait and microwave mine for about a minute and a half to thaw mine)

°3 T. melted butter

°1/4 tsp salt and pepper

°7 eggs

°1/4 C milk

°1 1/2 C grated cheddar cheese

°1 tsp diced ham


Mix the hash browns, butter, salt and pepper together. Spray your muffin pan with cooking spray. Fill the cups about 3/4 of the way with the brown potatoes and using your fingers mold the cups with the brown potatoes and pressing them down. Place in the oven at 400 degrees for 20 minutes. Meanwhile, whisk in the eggs and milk and stir in the cheese and ham. Remove the potatoes from the oven and reduce the temperature to 350 degrees. Fill the cups almost to the top and return to the oven for 20-25 minutes or until the eggs are cooked through. Let cool for a few minutes, loosen the edges with a butter knife and gently place in a serving dish.
