Crab Balls


Crab Balls!!


•1 lb. Crab meat with hind fin

•1 scrambled egg

•1 cup mashed Ritz crackers

•1 tsp. yellow mustard

•2 tbsp. Fresh lemon juice

•2 tbsp. Chopped fresh parsley

•1 tsp. Old bay seasoning

•1 tbsp. Worcestershire sauce

Place the crab meat in a mixing bowl, picking up any stray shell fragments. Adding crushed crackers, Old Bay seasoning, and parsley to the crab. In separate bowl, combine eggs, mustard, lemon juice and Worcestershire sauce. Beat with a whisk until smooth. Pour the egg mixture over the crab meat and crackers and mix gently, being careful not to break up the large lumps of crab meat. Making golf ball-sized balls and placing them on a cookie sheet. Baking at 350 degrees for 30 minutes. Sprinkle with melted butter and leave to cool.
