Patty melts with secret sauce


°1½ pounds ground beef
°1 tsp kosher salt
°½ tsp ground black pepper
°12 tranches sourdough bread
°½ c secret sauce
°3 Vidalia onions, thinly slice
°6 slice Cheddar cheese
°8 tsp unsalted butter
+Secret sauce:
°¼ c Dijon mustard
°¼ c mayonnaise
°1 tsp barbecue sauce
°½ tsp hot sauce
In  bowl, combine mustard, mayonnaise, barbecue sauce & hot sauce. Store, covered, in the refrigerator for up to 3 days

In  bowl, blend ground beef,, salt / pepper. Shape ground beef to 6 oval patties.
In a medium cast iron skillet, melt 2 tablespoons butter over medium heat. Add the onion. Cook, stirring occasionally, until the onion is tender and golden, about 35 minutes.
In a large cast iron skillet, cook the patties over medium-high heat until golden brown and cooked through, about 2 minutes per side. Remove skillet from heat. Removing patties to skillet; wipe out skillet.
Layer 1 slice of bread with 1 tbsp of secret sauce, 2-3 tbsp of caramelized onions, 1 slice of cheese, 1 patty, and another 1 tbsp of secret sauce. Cover with another slice of bread. Repeat with remaining bread, secret sauce, caramelized onions, cheese and patties.
