Sweet potato pie


Everyone knows quiche. But the sweet potato quiche is much more original. Accompanied by fresh lamb cheese that goes very well with it, the famous tropical tuber becomes 100% French, elegant and delicious. A dish that will appeal to both gourmets and gourmets. Wouldn't that be the hallmark of big plates, right?

* Ingredients: 4 people.

° 1 short dough
° 2 large sweet potatoes
° 100 gm fresh lamb cheese
° 3 eggs
° 20 cl of liquid cream
° 80g grated Gruyere
° 1 bunch fresh chives
° salt
° pepper

* Preparation:

Start by setting your oven to a preset temperature of 6 (180°C).

Place the dough in a tart pan previously greased with butter. Sprinkle the dry beans on the bottom, and bake in the hot oven for 10 minutes, until the dough is golden.

Carefully peel the potatoes, roughly chop and cook in the pressure cooker for 15 minutes.

Meanwhile, whisk eggs with cream cheese and cream. Rinse the chives before cutting them, then add to the egg mixture.

Take the cooked sweet potato pulp, mash it with a fork to a puree, and mix it with the egg mixture. Salt and pepper to your liking.

Pour the quiche over the cooked dough and bake for 15 minutes. Then remove the quiche from the oven to sprinkle with the grated Gruyere and bake again for 10 minutes.
