Southern Creamy Pralines


This is a very old family recipe!

* Ingredients:

°3 cups of sugar
°1 cup full fat buttermilk
°1/4 cup light corn syrup
°pinch of salt
°1 teaspoon baking soda
°1 teaspoon vanilla
°4 cups pecans

* How to make it:

Combine sugar, yoghurt, corn syrup, and salt in a very large saucepan (it will froth more when soda is added) and bring to a boil well. Add the soda, stir, and cook until a soft ball forms when dropped into the cold water. 235 degrees Fahrenheit on a Candy thermometer, the syrup is in the "soft ball" phase. This means that when you drop a little of it into cold water to cool it, it will form a soft ball.
Then remove from heat and add vanilla. Beat until the color changes and the candy thickens. Stir in pecans. Place a teaspoon on a well-greased non-stick cookie sheet, tin foil, or wax paper. If you don't grease the pan well, it will stick (do it quickly before the candy hardens, just drop it on the tin foil.
