A traditional Italian recipe known by some as "Pasta Fagioli
*Ingredients
°300 grams pasta
°400g dried red or white kidney beans
°1 onion
°1 carrot
°5 garlic cloves
°100 gm cooked pork
°100 grams
°50 cl tomato coulis
°1 liter vegetable broth
°5 cl olive oil
°pepper
Preparation
Mix the carrots, onions and celery stalks.
For reservations.
Cut the meat and belly at the end.
In a large skillet over heated with oil, add 2 to 3 crushed garlic cloves. Take them out before they turn brown.
Pour the mixture into the oil and fry for 5 minutes.
Add a ladle of vegetable broth and let it evaporate over low heat.
Once the liquid has evaporated, add the pork and belly to the preparation. Saute for another 5 minutes before adding a ladle of vegetable broth.
Pour tomato sauce and beans into this preparation.
If you find that the preparation is not liquid enough, you can add more vegetable broth and simmer, covered, for an hour.
Meanwhile, cook the pasta.
At the end of the hour, take a scoop of the beans, which you will mix before re-cooking with the pasta.
You can add broth if the preparation is not liquid enough.
Serve hot.
