BANANA PUDDING CAKE




 * Ingredients :


°2 cups of milk

°2 eggs, separated

°2/3 cup sugar

°1/8 teaspoon salt

°2 tablespoons cornstarch

°1 teaspoon vanilla

°48 Sunshine Vanilla Wafer

°4 bananas (ripe)

°1/4 cup sugar


* Directions  :


Boilling  milk on  double boiler on  direct heat. Meanwhile, in a small bowl, combine beaten egg yolks, 2/3 cup sugar, salt, and cornstarch. Pour about ½ cup of pasteurized milk over the egg mixture, stirring until combined. Return the egg mixture to the milk remaining on top of the double boiler and set over the boiling water.


Cook, stirring, until mixture is smooth and thickened (about 6 minutes). Remove from the heather and add the vanilla.


Organize alternate layers vanilla wafers also slice ​​banana in 9-inch square cake or in a 1-1/2-quart saucepan. Pour hot custard on top & let to cool.


Preheat oven 425 degrees F . Beat eggs to stiff but not dried . Gradually add the remaining 1/4 cup sugar, continuing to whisk until the meringue is very stiff and shiny. Spread the pudding and turn brown in a preheated oven for 15 minutes. Makes 6 to 8 servings.
