*CHOCOLATE MAYO WITH BUTTER PEANUT ICING*


The chocolate mayonnaise cake has always been my family's favorite. Mayonnaise is the secret ingredient in this super easy and moist chocolate cake, and the optional peanut butter butter is amazing. Mayonnaise replaces eggs and oil in this easy chocolate cake.

* Ingredients :

+Cake:
° 2 c allpurpose-flour
° 2/3 cups of unsweetened cocoa powder
° 1 1/4 teaspoon baking soda
° 1/4 teaspoon baking powder
° 3 eggs
° 1 2/3 cups of sugar
° 1 teaspoon vanilla
° 1 cup mayonnaise
° 1 1/3 cup water

* Preparation 

 Mix all the wet ingredients first in a mixing bowl until well blended. Add all the dry ingredients except the flour and cocoa, once well mixed add the flour and cocoa a little at a time. Once well mixed, pour the mixture into a greased baking pan and bake at 350 degrees for about 30 or/and toothpicks come out clean. Allow the cake to cool completely before adding the frosting.

+ Frost:

° 3 cups icing sugar
° 1/3 cup peanut butter
° 1 1/2 teaspoons vanilla

Mix peanut butter and vanilla together. Then slowly add the sugar until it mixes well. If it's too thin, add more sugar if it's too thick, add 1 tablespoon at a time to the peanut butter until creamy. Spread over cold cake.
(I find it easiest to heat the garnish a little in the microwave for a few seconds at a time to spread it on the cake.)
