Arizona- Sunshine-Lemon-Pie

Any clean pie you blend up withinside the blender! A chopped entire lemon is mixed up with butter, sugar and eggs growing a custard like pie bursting with lemon flavor. Top it off with candy whipped cream !


+For the pie
° 1 entire lemon, washed & seeds removed (clean from tree & in season is best)
° four massive eggs
° half cup butter, melted (I used salted)
° 1 teaspoon vanilla (I use this)
° 1 half cups sugar
° 1 (nine inch) piecrust, unbaked (I use a frozen deep dish)
+For the topping
° 1 cup whipping cream
° 2 tablespoons sugar


Taking pie crust out of freezer or making yoru own.I used a thick crust for a frozen meal and it worked great. I positioned it on a cookie sheet for support. If the usage of a selfmade pie crust in a tumbler dish, you do not want to do this.
Pre-warmth oven to 350 degres.
Wash your lemon nicely then break up and take away all of the seeds. (No want to peel it, you may mixture the entire lemon!) Plae on your blender.Add eggs, butter, vanilla and sugar. Beat until smooth.I started with the fifth test, then increased to 10.
Pour the combination into your piecrust. Bake for approximately forty mins or till set.
Let the pie cool, then kick back withinside the fridge.
For the topping
Place a bowl and beaters withinside the freezer for 20 mins (now no longer manditory). Pour on your whipping cream and sugar. Whip till peaks form.Cut open the cake and serve cold, top with a layer of whipped cream.
