Sweet potato pie


°1 sweet potato (1 pound)

°½ cup softened butter

°1 cup white sugar

°½ cup milk

°2 eggs

°½ tsp ground nutmeg

°½ tsp ground cinnamon

°1 teaspoon vanilla extract

°1 x 9-inch uncooked pie crust


Boil the whole sweet potato in the skin for 40 to 50 minutes, or until done. Strain the cold water over the sweet potato and remove the skin.

Breaking sweet potato in a bowl. Add the butter and stir to combine. Stirring in sugar, milk, eggs, nutmeg, cinnamon also vanilla. Beat on speed to smooth. Pour the filling into a raw pie crust.

Cook at 350 degrees F (175 degrees C) for 55 to 60 minutes, or until the knife inserted in the centre comes out clean. The pie will swell like a soufflé, then sink as it cools.
