SKILLET OF STUFFED PEPPERS




*Ingredients

°1 pound ground beef 
°1 tsp oil
°3 bell pepper
°1 jalapeno - seeds and stem removed, finely chopped
°1 cup tomato sauce
°1 teaspoon of salt
°2 tsp ground cumin
°2 tsp chilli powder
°1 tsp onion powder
°1 tsp garlic powder
°½ c beef broth
°3 c prepare Spanish-style rice – 2 packet Spanish-style minute rice work great
°1 cup shredded fiesta cheese mix – or Monterey Jack cheese
°cilantro and green onions for garnish – optional

*Instructions

In a large skillet over medium-high heat, add the oil, ground beef, diced peppers and chopped jalapeño.
Cook for 6 to 8 minutes, stirring and using a spatula or spoon to break up the ground beef, until the meat is completely browned and the peppers are tender.
Stirring in tomato sauce, salt, cumin, chili powder, onion powder, garlic powder & beef broth.
Reduce heat to medium-low and simmer for 5-10 minutes until reduced and thickened.
Stir in the rice. Garnish with grated cheese. Covering for 2-3 min to cheese is melt.
Garnish with cilantro and green onions if desired and serve.
