Magic Lemon Pie


°3 eggs, separated
°2 tbsp. 10 ml lemon zest, grated
°1 can300 mlEagle Brand® regular or low fat sweetened condensed milk
°½ cup125 mllemon juice1 pre-baked puff pastry crust or 9-inch (23 cm) ready-made graham cracker pie crust ¼ tsp. 
°1 ml cream tartar
°¼ cup50 mlsugar

* Methods   

   1 : Beat egg yolks and whisk in lemon zest, sweetened condensed milk and lemon juice. Pour into prepared crust.
  2 : Bake in preheated 325°F (160°C) oven for 25 minutes. Remove from the oven and increase the temperature to 350°F (180°C).
  3 : Beat egg whites with cream of tartar until fluffy and gradually beat in sugar, beating until stiff but not dry peaks form. Gently spread the meringue over the hot filling and adhere it to the sides of the crust.
  4 : Return to oven and bake for 10 minutes or until meringue is golden brown. Let cool. Refrigerate before serving, if desired.
