BACON WRAPP SMOKIES WITH BROWN SUGAR & BUTTER





* Ingredients : 

°5 pound boneless, turkey breast
°2 pounds bacon 
°4 tablespoons smoked turkey 
°3 cups cranberry barbecue sauce 
°8 tablespoons butter 
°½ cup brown sugar

*Methods : 

Preheat smoker. Preheat smoker to 120 degrees C with your favourite hardwood. I like maple, pecan, apple or cherry for this recipe.
Making turkey bite. Cutting your turkey breast to 1.5 inch cube Season all sides with turkey seasoning. Wrap each piece of cubed turkey in half a slice of bacon & secure with a toothpick.
Smoke the bacon-wrapped turkey bites. Arrange the turkey bites directly on the grill grates, making sure the bites are not touching or too close together. Close the lid and smoke until the internal temperature is 55 degrees C.
Braise on the barbecue. Transfer partially cooked bites to two aluminum pans the size of half a hotel casserole. Turn up the heat on your smoker (or turn on your oven to 200 degrees C). Sprinkle brown sugar evenly over top of bites. Place the cubes of butter and 4 tablespoons in each mold. Finally, pour the barbecue sauce over the turkey bites.
Finish cook turkey bites. Return the pans to the grill or hot oven, close the lid and grill for 15-20 minutes, stirring gently every 5 minutes, until the internal temperature of the bites reaches 75 degrees C.
Rest and serve.   Remove from grill and let stand 10 minutes before serving.
