Pasta Fagioli


There are many variations on this rustic Italian dish, and its name simply means pasta and beans. Some skip the tomatoes, and others add a bit of pork or meat pie when cooking for a richer version.


* Ingredients:

° 2 lbs. of minced meat
° 1 chopped onion
° 3 carrots chopped
° 4 stalks chopped celery
° 2 (28 ounce) cans diced tomatoes, undrained
° 1 can (16 oz) red-kidney beans, drained and rinsed
° 1 can (16 oz) white-beans, drained also rinsed
° 3 cans (10 ounces) beef broth
° 3 teaspoons. spices
° 2 tsp. pepper
° 5 teaspoons. parsley
° 1 tsp. Tabasco sauce (optional)
° 1 (20 ounce) spaghetti sauce
° 8 ounces of pasta

* Directions :

Brown beef & drain fat...... Then put it in crock pot with all other ingredients exceptly pasta. Simmer on low heat for 7-8 h  or on high heat about 4-5 h . 

Add pasta 30 minutes before eating. Served with crunchy spicy bread!!! Note: If you don't have a large crock pot, cut the recipe in half. 

Fagioli pasta also freezes great, so you can make a big batch and freeze the rest!!!
