°1 cup uncooked oats (instant or regular, I used oat flakes)
°1 1/4 cup boiling water
°1/2 cup butter or 1/2 cup ghee
°1 cup granulated sugar
°1 teaspoon vanilla
°2 eggs
°1 1/2 cups flour
°1 teaspoon baking soda
°1/2 teaspoon salt
°3/4 teaspoon cinnamon
°1/4 teaspoon nutmeg
topping-
°1/4 cup butter or 1/4 cup melted ghee
°1/2 cup brown sugar
°3 tablespoons cream or 3 tablespoons milk
°3/4 cup shredded coconut
°1/3 cup chopped nuts (optional)
* Directions :
In bowl, soak oats in boil water for 21 min .
Meanwhile, measure the butter and sugars into the mixing bowl and whisk until light.
Beat in eggs and vanilla.
Sift the flour, measure, sift again with soda and spices.
By this time the oats will be soaked and cooled.
Removing beaters from cream blend & fold in soak oats.
Sift the flour mixture and stir.
Flip into a buttered 9×9 saucepan and bake at 350°F for 40-50 minutes.
Mix all decorating ingredients.
Do not remove the cake from the pan but while it is still hot spread it over it and place it under the grill until it bubbles and turns golden.
Watch carefully.
