*Pecan-Pie-Cookies recipe*


** Ingredients :

° 1 prepared pie crust (homemade or purchased, I used Pillsbury)
° 2 tablespoons melted butter
° 1 cup chopped pecans
° ½ cup packed brown sugar
° 1/4 cup corn syrup
° 2 eggs
° 1/8 teaspoon salt
° 1/4 cup semisweet or milk chocolate, for garnish.

* Directions :

Preheaat oven 400 degres. In a large nonstick skillet, mix together butter, walnuts, brown sugar, corn syrup, salt, and eggs.
Cooking on stove on medium-low heat to firm.

(You don't want it to dry, but rather to be a little thick, about the consistency of a pudding.) Remove from fire and set aside.
Roll out the dough, use a 3-inch cookie cutter, and cut out circles. Gently fold about ⅛-1/4 over the edges, then place 1 tablespoon of the pecan mixture into each circle.

Place on a tray lined with foil (it is important to lined it) and bake for 8 minutes or until filling is complete. Remove from the oven and cool on a wire rack.

Put the chocolate chips in a small Ziploc bag (use the brand name, store brands tend to leak). Microwave about 15 seconds or until melted. Cut a small corner of the bag and sprinkle the chocolate over the biscuits. Wonderful.
